At one time, only a handful of Sonoma County wineries required reservations for tasting. With the pandemic, almost everyone in Sonoma and Napa went to reservations as a means of crowd control and safety. Many have stayed that way.

Many Sonoma wineries are fine with walk-ins now. This list is from the Wine Road association of wineries in northern Sonoma County. It includes Russian River Valley, Dry Creek Vly, Alexander Vly, and the towns of Santa Rosa, Windsor, and Healdsburg. It does not include Sonoma Valley, Carneros, or the towns of Sonoma and Petaluma.
The Wine Road website contains a lot of useful information about the member wineries. Not all wineries in this area belong to the Wine Road association, so there may be others allowing walk ins. I don't know about Napa, but I would guess dropping without a reservation might work at many places on out of season weekdays. It will just depend on how busy they happen to be at the time.
