I hear that, or something similar, fairly often. Most folks will blame it on sulfites because they are mentioned in a warning on the wine label. What are the actual issues and causes of these unwelcome reactions drinking wine? Yes, it's often red wine that's the culprit. Disclaimer: I ain't no doctor. It's always good to consult a professional if you have a serious problem.
Headaches / hangovers are believed to be caused by inflammation of blood vessels so an anti-inflammatory drug might help.
Inflammation can occur in the gut, also. This might particularly effect those with bowel diseases like coitus.
There are histamines in wine. The concentration is much higher in red wines. The affect is usually similar to a spring allergy. You can try an antihistamine before consuming wine to see if that helps.
Tannins naturally occur in wine, again mostly in reds. You also find tannins in black tea. Tannins dry you out and dehydration is a cause of headaches and hangovers. Drink lots of water.
Sulfur is a preservative used in many foods, including wine. Generally, this is more like a scratchy throat to an asthma attack depending on your sensitivity. Do some research and try other foods that are high in sulfur and see if you get similar results.
Allergens may be present usually depending on the fining method used for the wine.For instance, egg whites or fish parts may be used and this is not listed on the label.
If you suspect any of these are causing you problems then Google search for more detail.
In my experience with dealing with these questions (ranked from most likely) it's dehydration, histamines or sulfur. You might think it's funny to find dehydration listed first, but I think many people don't really how easily a young red wine could dehydrate you (more likely with Cabernet or Syrah; less likely with Pinot).
